A gluten free and dairy free vanilla sponge traybake with sweet glazed icing and sprinkles – mmm!
I’m not sure about you, but recently, my Instagram feed has been full of ‘old school’ / ‘retro’ sprinkle cakes, and I haven’t been able to stop thinking about them! So, I decided to give in to my cravings and give one a go!
This traybake is made from a soft and light vanilla sponge with a smooth sugary glaze and sweet sprinkles – ah, it’s so good and gives me all the primary school feels!
Ingredients
For the Cake:
- 250g DF Butter
- 250g Caster Sugar
- 1 Tsp Vanilla Extract
- 4 Eggs
- 250g GF SR Flour
For the Icing:
- 300g Icing Sugar
- 3 Tablespoons Water
- Pink Food Colouring
- Sprinkles
Instructions
For the Sponge:
Preheat the oven to 160 degrees celsius.
Line a deep baking tray with non-stick baking paper.
Place the butter and sugar into a large mixing bowl. Use an electric whisk, on a medium to high speed, to mix the ingredients together; whisk until the mixture is light and creamy.
In a separate bowl, crack 4 eggs and beat them with the same whisk until they appear light and frothy.
Slowly add the beaten eggs into the mixture and whisk at a high speed until it appears light, fluffy and creamy.
Next, add in the vanilla extract.
Sift the flour bit by bit into the mixture and fold it in a figure of 8 – do this until all the flour is folded in.
Pour the mixture into the pre-prepared baking tray.
Bake in the preheated oven for 35-40 minutes. Check to make sure the cake is well risen and cooked properly; do this by interesting a skewer into the middle of the cake and be sure it comes out clean.
Leave the cake to cool before decorating.
For the Decoration:
In a large bowl, mix together the icing sugar, water and pink food colouring. The icing should appear like a glaze which is thin enough to pour but thick enough to cover the cake.
Drizzle the icing over the cake and add the sprinkles.
Allow the icing to set before cutting into squares.
And for the perfect pudding, serve with (free from) whipped cream or custard! Yum!
