A light and fluffy sponge infused with chocolate chips, cinnamon and bananas topped with a creamy chocolate buttercream and chocolate sprinkles too!

These Chocolate & Banana Cupcakes are deliciously moist and full of flavour. I would advise accompanying each cupcake with a hot chocolate too – this maximises the chocolate taste further – mmm!

Ingredients

Mixture: (Makes 14)

  • 250g GF Self Raising Flour
  • 1 tsp  Ground Cinnamon
  • 2 Eggs
  • 200g Caster Sugar
  • 100g Vegetable Oil
  • 2 Bananas (Approx 200g – Ripe and Mashed)
  • 2 tbsp Oat Milk
  • 1 tsp GF Baking Powder
  • 50g DF Chocolate (grated)

Chocolate Buttercream:

  • 140g DF Butter
  • 400g Icing Sugar
  • 50g Cocoa Powder
  • 4 tbsp Oat Milk
  • 1 Banana (sliced into 14 pieces to decorate)
  • 50g DF Chocolate (grated)

Instructions

Mixture

  1. Preheat the oven to 180 degrees.
  2. Mix the eggs and sugar together until thick and pale.
  3. Add the oil and beat until smooth.
  4. Add the mashed bananas and mix until all the ingredients are combined.
  5. Mix the milk and baking powder together and add to the mixture.
  6. After this, add in the sifted flour, cinnamon and grated chocolate. Beat on a low speed until all the ingredients are combined.
  7. Divide the mixture between 14 cupcake cases.
  8. Bake in the preheated oven for around 20-25 minutes.
  9. The cupcakes will be ready to take out the oven once they have risen and are a golden-brown colour. You can also check if the cupcakes are cooked by inserting a skewer into the middle of each cupcake and be sure it comes out clean.
  10. Leave the cupcakes to cool before decorating.

Chocolate Buttercream:

  1. Beat the butter in a bowl with a mixer until thick and creamy.
  2. Add in the icing sugar and cocoa powder and beat on a low speed until the mixture is combined.
  3. Slowly pour in the milk and beat the mixture for a further couple of minutes.
  4. Spread the frosting over each cupcake with a spoon or piping bag.
  5. Place the chocolate sprinkles around the edge of each cupcake, or you can also cover each entire cupcake.
  6. Finish by placing a slice of banana on the top.
