Super simple syrup sponge pudding for one.

This recipe is the perfect go-to if you are looking for a sweet, delicious pudding that can be made in minutes!

Ingredients

  • 2 Tbsp GF SR Flour
  • 1 1/2 Tbsp Caster Sugar
  • 1 Egg
  • 2-3 Tbsp Milk (I use Oat Milk)
  • 1 Tbsp Golden Syrup (Plus extra for drizzling)

Instructions

Choose your favourite microwavable mug.

Place the flour, sugar, egg, and milk into your mug and mix until all the ingredients are combined. The mixture should appear smooth.

Next, add a large tbsp of golden syrup into the middle of your mug cake.

Microwave on full power (1000 watt) for 1 minute.*

If the cake is cooked, it will be well risen and firm to touch.

Drizzle on some extra golden syrup and enjoy!

*If your microwave is lower in power, cook for longer. I would advise cooking for 90 seconds and then check after every additional 15 seconds you add.
