Caramel and cake… name a better duo, I’ll wait!
Two layers of caramel sponge sandwiched together with a creamy caramel frosting. Covering the top of this dreamy cake is a velvet vanilla buttercream with drizzles of caramel sauce and mini millionaires shortbread to decorate.
For this recipe, I used Lazy Day Foods ‘Millionaire’s Shortbread’ as they are my favourite free from alternative! They are free from gluten, milk and egg and are suitable for vegetarians and vegans too.
This cake is fabulously free from gluten, wheat and dairy.
Ingredients
Sponge
- 250g DF Butter
- 250g Light Brown Sugar
- 1 tsp Vanilla Extract
- 250g GF SR Flour
- 4 Eggs
Frosting/Decoration
- Betty Crocker ready-made Vanilla Buttercream
- Betty Crocker ready-made Salted Caramel Icing
- Lazy Day Foods ‘Millionaire’s Shortbread’ (Optional)
Instructions
Method for Sponge
- Pre-heat the oven to 180 degrees celsius.
- Place the sugar, butter and vanilla extract into a large mixing bowl. Use an electric whisk, on a medium to high speed, to mix the ingredients together; whisk until the mixture is light and creamy.
- In a separate bowl, crack 4 eggs and beat them with the same whisk until they appear light and frothy.
- Slowly add the beaten eggs into the mixture and whisk on a high speed until it appears light, fluffy and creamy.
- Sift the flour bit by bit into the mixture and fold it in a figure of 8 – do this until all the flour is folded in.
- Using a big spoon, separate the mixture evenly into two greased baking tins.
- Bake in the pre-heated oven for 18 minutes. Check to make sure the cakes are well risen and cooked properly; do this by interesting a skewer into the middle of the cake and be sure it comes out clean.
- Leave the cakes to stand for 10 minutes before transferring them onto a cooling rack.
Method for Frosting/Decorating
- To fill the cake, spoon some of the Betty Crocker Vanilla Buttercream onto the top of one of the cakes. Cover the cake with the buttercream (leaving a little room at the edges). Crush 2 of the Lazy Day Foods ‘Millionaire’s Shortbread’ and place the pieces on top.
- Place the other half of the cake on top of the other – sandwiching the two together.
- If you like to decorate cakes (like me), then go ahead! To make the cake as I have, I covered the top of the cake with more of the ready-made Betty Crocker Vanilla Buttercream and then melted 15g of the Betty Crocker Salted Caramel Icing to drizzle over the top. I then individually added the Lazy Day Foods ‘Millionaire’s Shortbread’ to the top to finish it off.

To match perfectly alongside the cake, I made a mini version in the form of a cupcake… cute, right?
