With Halloween creeping up on us, I decided to get creative in the kitchen.

These free from Rice Krispie Squares are super simple to make with minimal ingredients and equipment needed.

The free from Rice Krispies that I used were the Nestle Go Free ‘Rice Pops’ which are an excellent substitute. For the decoration, I used ready-made Royal Icing and food colouring to create these creepy (yet scrummy) creatures.

Each creepy & cute creature is fabulously free from gluten, wheat and dairy – how spooktacular is that?!

Ingredients

  • 1 Tbsp DF Butter
  • 4 Cups White Mini Marshmallows
  • 5 Cups GF Rice Krispies
  • Ready-made Royal Icing
  • Food Colouring
  • Edible Sugar Eyes

Instructions

Method for Krispie

Line a baking tray with non-stick paper.

In a large saucepan, melt the butter over a low heat.

Add the marshmallows and stir until completely melted.

Remove from the heat and add the rice krispies.

Stir until all the rice krispies are covered with the melted marshmallows.

Spoon the mixture evenly into the baking tray and press it down using the back of the spoon.

Place the baking tray in the fridge and leave the mixture to cool.

Once the mixture is cool, cut into 2-inch squares.

Method for Decorating

Using four separate bowls, add two tablespoons of the ready-made royal icing into each bowl.

Add in a drop (or two) of food colouring to each separate bowl – mix until combined.

Take one of your krispie squares and cover the top half with a coloured icing of your choice and place the sugar eyes on top of the icing. Put to the side and leave to set.

Repeat this step until you have created all of your creepy creatures.
