Two chocolate biscuit layers sandwiched together by a creamy chocolate buttercream.

Both crunchy and smooth in texture makes this sandwich-style biscuit a perfect treat to drunk in your tea or cup of cocoa.

This bake was inspired by a recipe from the ‘Creative Chocolate Cookbook’ published by Cadbury in 1984. I love this cookbook for many reasons – not only the delicious recipes, but the memories I have of looking through it as a young child at my grandma’s house and being fascinated every time.

Ingredients

Biscuits:

  • 125g DF Butter
  • 125g Caster Sugar
  • 1 Egg
  • 1 Tsp Vanilla Extract
  • 300g GF Plain Flour
  • 25g Cocoa

Buttercream:

  • 50g Cocoa
  • 200g Icing Sugar
  • 1-2 Tbsp DF Milk (I use Oat Milk)

Instructions

Biscuits:

Preheat the oven to 160 °C.

Put the butter and sugar in a mixing bowl and cream together.

Once combined, gradually add in the beaten egg and vanilla extract.

Sieve in the flour and cocoa and mix together. Mix until a dough is formed.

Place the biscuit dough between two sheets of non-stick baking paper and roll out to around 3-4mm thick.

For these biscuits, I used by embossed ‘Queen of the Desserts’ rolling pin. However, a regular rolling pin works fine, but the biscuits will be plain in pattern. Therefore, you can add your own design once you cut out your biscuits.

Use a rectangle biscuit cutter to cut out your biscuits.

Place the biscuits on a greased or non-stick baking tray and pop them in the oven.

Bake for about 15-20 minutes.

Leave the biscuits to cool before icing.

Buttercream / Decorating:

In a large bowl, mix together the cocoa, icing sugar and milk until a smooth buttercream is formed.

Spread one of the plain biscuits with a thick layer of the buttercream and sandwich together with another plain biscuit.

Wipe off any excess buttercream.

Repeat the process to make the rest of the Bourbon Biscuits.

I also made one giant Bourbon Biscuit and left a few plain too.
