Did anybody else eat Rice Krispie Squares bars growing up as child? Baking and eating these reminded me of my primary school days and the pure delight I used to get when I found one in my pack-up box.

With minimal ingredients and equipment needed, Rice Krispie Squares are the perfect simple sweet treat to make.

Ingredients

  • 1 Tbsp DF Butter
  • 4 Cups White Mini Marshmallows*
  • 5 Cups GF Rice Krispies

*This recipe also works with pink marshmallows but the Rice Krispie Squares will turn out pretty and pink in colour (see below for a picture). To make this recipe vegan, simply replace the marshmallows for a vegan alternative.

Instructions

Line a baking tray with non-stick paper.

In a large saucepan, melt the butter over a low heat.

Add the marshmallows and stir until completely melted.

Remove from the heat and add the rice krispies.

Stir until all the rice krispies are covered with the melted marshmallows.

Spoon the mixture evenly into the baking tray and press it down using the back of the spoon.

Place the baking tray in the fridge and leave the mixture to cool.

Once the mixture is cool, cut into 2-inch squares.
